Ingredients

  • ½ cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon ground paprika
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon garlic powder
  • 4 boneless, skinless chicken breasts

Instructions

  1. Add the broth.
    Pour the ½ cup low-sodium chicken broth into the bottom of the slow cooker.
  2. Mix the seasoning.
    In a small bowl, combine the kosher salt, onion powder, dried thyme, paprika, black pepper, and garlic powder.
  3. Season the chicken.
    Coat the chicken breasts with the olive oil, then evenly rub the prepared seasoning mixture over all sides.
  4. Place in slow cooker.
    Arrange the seasoned chicken breasts inside the slow cooker.
  5. Cook.
    • Cook on High for 3–4 hours, or
    • Cook on Low for 4–6 hours.
  6. The chicken is done when it reaches an internal temperature of 165°F.

  • Adjust the herbs and spices to suit your taste—simply rub them onto the chicken before cooking.
  • Boneless, skinless chicken thighs can be substituted using the same ingredients and directions.
  • Bone-in or skin-on pieces may require different cooking times. Always confirm the internal temperature reaches 165°F before serving.
  • Cooking duration depends on your slow cooker setting:
    • Low: 4–6 hours
    • High: 3–4 hours
 
Storage & Reheating
  • Store cooled chicken in an airtight container in the refrigerator for 4–5 days.
  • Reheat gently in a skillet over medium-low heat or microwave in 30-second intervals until heated through.
Freezing Instructions
Allow the chicken to cool completely. Transfer to freezer-safe bags or containers and freeze for up to 3 months. For added protection against freezer burn, wrap portions in foil or plastic wrap before sealing. Thaw overnight in the refrigerator before reheating.
